Happy Tuesday!

Tonight I am celebrating the end of Peter’s season of The Bachelor. If you have been watching, you know this season has been crazy. And if you haven’t been watching, you probably have heard about “Champagne Gate,” the “ultimatum” given to Peter, and the most awkward date featuring Chase Rice—and that is only some of the crazy drama that has unfolded. I am happy this season has finally come to an end and plan on celebrating by enjoying a glass of wine while more drama is sure to unfold. Even if you aren’t interested in The Bachelor/Bachelorette, I recommend you start watching so you can have the most hilarious conversations at work with your coworkers! It is always a hit in the lunchroom!

This Week’s Favorites:

1. Urban Cookies

This past week at work we celebrated my coworker getting a job offer! I am currently a judicial law clerk, which is a one-year position, so most clerks either already have a job lined up or are looking for a job. We celebrated with cupcakes and donuts from Urban Cookies—I had a carrot cake cupcake and it was incredible! Carrot cake is my absolute favorite! If you are in Phoenix, check out Urban Cookies next time you are looking for a sweet treat!

2. Once on this Island

This past Friday, I saw the musical Once on this Island. Once on this Island is a beautiful story about love, community, and storytelling. I had no idea what I was in for before the show, but I left feeling inspired. If you ever get a chance to see this show, do it!

3. This Beef Stew

I made this Half Baked Harvest Beef Stew again and it was just as good! I made some modifications to work with the pans I have and to fit my taste! You can find out how I make it my own and how I make it without an oven-safe pan, here!

4. My Onion Chicken Recipe

A favorite because it is delicious, easy to make, and has a beautiful golden color. If you are looking for a quick and easy weeknight meal, this recipe is for you!

5. These Women in Food

Sunday was International Women’s Day, so I put together a list of just a few amazing women working in the food industry in one way or another. These women range from food bloggers to restaurant owners, and they are all extremely inspiring.

6. Happy Hour @ The Collins Small Batch Kitchen

When a restaurant has happy hour every day of the week I automatically like it—I love a good deal on the weekend! The Collins is one of those places. The Collins happy hour menu includes food, beer, wine, and cocktails! The atmosphere is cute and cozy—a perfect place for friends to get together or for a family outing. I was there to celebrate a friend’s birthday. We ended up getting a complimentary slice of carrot cake and a complimentary slice of Boston cream pie, and we didn’t even tell them it was her birthday! So fitting! And, as mentioned in my first favorite this week, carrot cake is my absolute favorite—I can never turn it down.

The restaurant staff was friendly, the food was delicious (our group ordered oysters as an appetizer and a few pizzas), and parking is easy. All around a great spot. Lastly, this restaurant is peanut-free, so friends with a peanut allergy, this is the place for you!
