January is a big month for me—on January 1, I started a Whole30 (basically eating Paleo + no drinking + a few more restrictions for 30 days) and on January 4, I started my new job as a commercial litigation attorney! Although both of these beginnings bring on their own stresses, it is the kind of stress I thrive on. I love the way eating healthy makes me feel, and being busy with work keeps me sane.

You know how some people say “too blessed to be stressed?” My saying is more of “blessed and stressed.”

One thing that really helped me stay organized during my first week of work was the 10 minutes I spent last Sunday planning out what we would eat for the week. Surprisingly, we actually stuck to it! I also prepped a Sausage & Egg Bake to eat for breakfast on Monday and Tuesday.

Our dinner menu for the past workweek:

  • Monday: Trader Joe’s Chili Lime Chicken Burgers & Air Fryer Sweet Potato Fries
  • Tuesday: Ground Beef Taco Salad
  • Wednesday: Ribs & Roasted Potatoes
  • Thursday: Homemade Chicken Soup
  • Friday: Chipotle—we tried the new cauliflower rice!

Writing down what we would eat for dinner each night before the week started made dinner so easy and did not require any extra thought!

This week’s outfits: Over the holidays, I went shopping with my future mother-in-law, sister-in-law, and niece, anticipating I would want some new workwear! All of these pieces in the above photos, including the pearl headband, are from White House Black Market, but this super cozy puff sleeve gray dress is the best! Comfortable, cute, and on sale (50% off!!).

I’m still deciding what we will eat next week, but I picked up some ribeye steaks so that will definitely be on the menu!
